St. Patrick’s Day Mini Chocolate Guinness Cupcakes

In honor of St. Patrick’s Day today, I decided to bake up some mini cupcakes made with Guinness coupled with some Bailey’s Irish Cream frosting. Unfortunately (or fortunately), I didn’t have any Bailey’s at the house so I improvised. Luckily, I did have Jameson, and it is an Irish whiskey — so I added that instead and I think it turned out pretty tasty.

The cupcakes itself aren’t overly sweet, which I love, and the frosting on the top adds a bit of kick that you’d come to see from something that has a delicious whiskey to it. I’m not much of a baker since I’m not into measurements much, but I managed to pull this off. This may give me more confidence to do more baking.

Maybe beer bread next? What type of beer works best in beer bread? Leave a comment below with your suggestions.

Brew Dog’s Sink the Bismark - World’s Strongest Beer
It’s 41% ABV! This is beer. Average beer is right around 5.5%. I’m tempted to purchase a bottle of Brew Dog’s Sink the Bismark and have a good ‘ole time. Maybe for the next round of “Beer Tastings”? Possibilities?

Have you buried and roasted a pig?

I would love to try that out. I remember roasting a pig while in the Philippines. Although, the way we do it in Pampanga — we roast it over an open flame constantly rotating it. We call that “lechon”. That gives it that delicious crispy skin. When you bury it (a la Hawaiian style), you don’t get crispy skin, but it’s still damn delicious.

San Mig Light - How I’ve Missed You :(
In light of my recent traveling bug (New Zealand), I just saw this photo come through and it makes me think of the Philippines. I definitely miss it, and after the get together today, hopefully the next time I go — it’s with the cousins. That would be a fun time.
